Saturday's food

Well, it's Saturday which means we all slept in, then I got up and read in peace while drinking my coffee. There was a slight breeze blowing my white curtains as the scent of flowers filled the house. Hahahahahaha, that's hilarious!!

We actually did have a pretty relaxing morning, just hanging out at home. For breakfast, I made smoothies with bananas, frozen blueberries and blackberries, and freshly squeezed orange juice. (Next time I'll use pre made...it's a lot of work to juice by hand and there's no way that would work during the week!) So yummy, sweet, and filling. We all enjoyed them. 

For lunch, the kids had turkey sandwiches and apples with peanut butter. I know, turkey is meat. But we still have some food that doesn't fit with the new plan and there's no way I'm tossing it. We're on a pretty tight grocery budget and it just doesn't make sense to throw food away! We have some eggs that I'll either scramble or use in something baked. And heck yes, I have a couple boxes of mac n cheese in the pantry! That'll be a treat for the kids when we have date night! (Esther has mac n butter using her butter substitute.)

Kyle and I had Asian salads with lettuce, spinach, green onions, celery, carrots, bell peppers, and sliced almonds. For dressing, we used a gluten-free peanut sauce that we usually put on stir fry. Kyle also added some Thai chili sauce that was leftover from Thai takeout. Too hot for me!

In the afternoon I was getting pretty snacky, so I drank a bunch of water and had some almonds.

For dinner I made coconut curry, which is in pretty regular rotation around here (even though the kids don't care for it much.) I've been using this recipe since we found out about Esther's allergies. That website seriously saved my sanity...all the recipes are dairy and soy-free, and are also pretty easy to make. They even have tips about what parts you can do ahead of time, in case your baby needs you. Anyway, I made 2 cups of white rice (I know brown is healthier, but it's so good) in a rice cooker. I found mine brand new in the box at a thrift store for $15. For the curry, I used onion, garlic, carrots, potatoes, zucchini, and frozen peas (add the zucchini and peas at the very end.) I didn't have fresh basil (you can buy a plant for $2.99 at Trader Joe's, which is cheaper than a package in the produce section!) so I used dried. Not as good. The only thing missing from the recipe is soy sauce, so if you don't have trouble with soy or gluten, add that toward the end, too.

The lessons for today were, 1) when I'm "hungry" I'm really usually just thirsty, and 2) when you drink water any time you're "hungry" you have to pee a lot.

I'm stuffed from the starchy dinner, but I think I'll have a night cap of some Baileys Irish Cream over ice. Someone has to get all the "junk" out of the house...I'll take one for the team.
