First full day

My hope is to document what we eat each day, no matter what. If I eat ice cream...yeah, it'll be on here! I'm hoping it will help me to stay on track and also show that vegan eating doesn't have to be fancy or just eating rabbit food.

My husband and kids all LOVE cereal. Esther has hers dry with rice or almond milk on the side, and the boys will usually wolf down 3 bowls with 1%. We do try to keep the cereal pretty healthy and low in sugar. I think the cereal will be the hardest thing for Isaac because he loves being able to come downstairs and "fix" his own breakfast. It'll just take some planning the night before to make this a possibility.

Day one was Friday and we're still on Christmas Break, so there was no rush. I made steel cut oats with apples, bananas, cranberries, almonds, coconut oil, and honey. (I know Stevia is a better sweetener, but I'm going to use up our honey before buying anything new.) The oatmeal was so tasty and really filling too. Isaac had his with cranberries only and Esther just drank almond milk. She's kind of a grazer in the morning, so by 10am she also had an orange, some dry cornflakes, and a banana.


Since we're wrapping up vacation, we decided to drive to Hoover Dam (about an hour away) today. I packed a mix of peanuts, almonds, and pepitas to snack on and also brought some apples, oranges, and bananas. I figured we could have that as a kind of lunch-snack and then eat something small when we got home. We ended up being gone all day and turning it into more of a road trip, which was really fun! We're enjoying the different landscaping in the Southwest. By the time we were heading home, the snacks were gone and the kids were hungry. We were literally in the middle of nowhere, but did see a Carl's Jr. Eh, whatever. Isaac had a Famous Star with cheese and Esther had an order of fries. Kyle and I shared an order of sweet potato fries. Haha, so healthy!!!

When we got home for dinner, Isaac was full (wonder why!) and Esther had an apple with peanut butter. Kyle and I had some leftover beans and rice with salsa. I do plan on making that as a dinner, but this was really basic...next time I'll add green onions, cilantro, corn, and lime.

The lesson for today was to plan ahead, and over-plan for when you'll be away from home. I guess we had a half successful day? I will say though, normally on a road trip there would definitely be milkshakes, most likely Blizzards with Reeses peanut butter cups. And when we stopped for gas, Kyle was tempted to get Cheetos, but then remembered...cheese.

I'm giving myself a pass and saying we did pretty well for beginners!

  1. Love the new blog. Keep it up. I find the correlation between food and health so interesting. You just might inspire me to give vegan another try!!

  2. If you do stevia, green stevia is what you want to get, otherwise, it's processed and not good for you. Raw honey, maple syrup or green stevia are the best things you can do for for sweetener.
