For lunch I had leftover bean salad/dip from yesterday and it was just as good...maybe even better because the flavors had time to soak in.
I made minestrone soup for dinner and it was fantastic! I got the recipe from allrecipes.com and just made a few adjustments. Kyle doesn't like green beans, so I used three zucchinis instead of one. I didn't have any "chicken flavor seasoning" (whatever that is) so instead of water, I used vegetable broth. I dumped the herbs in because a pinch didn't seem like enough for a whole pot of soup. I also added an extra can of cannelloni beans and more carrots to make it heartier. It turned out great! I was tempted to skip the cayenne pepper because I was scared, but I'm so glad I didn't. It had just the right spice.
What would have made this dinner perfect was a ton of parmesan cheese and a big roll of crusty bread with butter. Sigh.
Today's lesson? I need to find some recipes without beans. That's all I'm gonna say about that.
